A double espresso is a two-ounce
extract that is prepared from 14
grams of coffee, through which
purified water of 205°F has been
forced at 10 atmospheres of high
pressure for a perfect extraction time of 18 to
26 seconds.
The espresso should drip out of
the porta-filter like warm honey,
have a deep reddish-brown color,
and a strong thick crema.
In order to achieve a long lasting
aromatic espresso, the proper
grinding, dose programming,
tamped pressure control, and the
extraction time must be
monitored throughout the day.
